  • 700grams cauliflower florets (cut into florets)

  • 2 medium eggs (beaten)
  • 6tablespoons garlic and herb passata
  • 2 large chicken breasts (sliced into strips)
  • 2teaspoons piri-piri spice mix
  • 2teaspoons olive oil
  • 200grams sweetcorn (canned, drained)
  • 100grams roasted red capsicum (jarred, drained)
  • 200grams mozzarella (torn)

Description

Easy cauliflower pizza with spicy chicken and sweetcorn is just as quick as ordering in and much healthier.

Method

Step 1 of 4

Pre-heat the oven to 180°C/160°C fan-forced. Blitz the cauliflower into rice in a food processor. Place in a bowl and microwave for 4 minutes.

Step 2 of 4

Tip the ground almonds and beaten eggs into the bowl with the cauliflower and mix well to form a dough. Divide the dough between two baking trays lined with parchment and spread each out into a tightly packed, medium round disc with the back of a spoon. Bake for 20 minutes until golden.

Step 3 of 4

Toss the sliced chicken with the piri piri seasoning in a bowl. Heat the oil in a large pan on medium high heat and cook the chicken strips for 8 minutes or until cooked through, stirring occasionally.

Step 4 of 4

Spread the passata on the pizza bases, top with mozzarella, chicken, sweetcorn and roasted capsicums. Bake for 5-7 minutes, until the mozzarella is melted, and serve.
