- 1 medium red onion, peeled and diced
- 1 large apple, seedless, halved
- 75grams red grapes, reduced fat
- 3tablespoons flaked almonds
- 150grams Greek yoghurt
- 1/2teaspoons garlic powder
- 1tablespoons lemon juice
- 8 slices wholemeal bread
Description
This lighter creamy chicken salad is an easy and delicious sandwich filler, perfect for using up leftover roast chicken.
Method
Step 1 of 2
Place the shredded chicken, onion, apple, grapes, flaked almonds, yoghurt, garlic powder and lemon juice in a bowl and mix well.
Step 2 of 2
Top 4 slices of bread with the chicken salad mix, press another slice on top, slice and serve.
