Quesadilla With Avocado, Spring Onion & Chilli

- 4 spring onions, finely chopped
- 1-2 fresh hot red chillies, deseeded and finely chopped
- 1/2 lime
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1/2tablespoons olive oil
- 2 tortillas
- 1/2 avocado, sliced
- 50grams Cheddar cheese
Method
Step 1 of 3
Place the spring onions, chillies, and lime juice in a bowl, season well with salt and black pepper, and mix together. Leave to sit for a couple of minutes to let the flavours develop.

Heat the olive oil in a non-stick frying pan, then fry one tortilla for 1 minute, or until lightly golden. Scatter over the avocado, leaving a little space around the edge, and spoon on the spring onion mixture, and sprinkle with the cheese.
Step 3 of 3
Top with the other tortilla, pressing it down with the back of a fish slice to sandwich the two together. Scoop the quesadilla up, carefully turn it over, and cook the other side for another minute, or until golden. Slice in half or quarters, and serve.
