  • 1 pinch black pepper
  • 1 pinch cayenne
  • 1tablespoons lemon juice

  • 2 spring onions, finely chopped
  • 3 tortillas
  • 5 basil leaves, to garnish
  • 1/2 red capsicum, seeded and thinly sliced

Method

Step 1 of 1

Toast 30g pine nuts in a dry frying pan for several minutes. Mix together with 1 ripe diced avocado,2 tbsp mayonnaise, salt and black pepper, pinch of cayenne, 1 tbsp lemon juice, 2 tbsp finely grated Parmesan, and finely chopped spring onions. Warm through 3 tortillas. Spread over the avocado mixture, scatter with basil leaves and 1/2 seeded and thinly sliced red capsicums, and roll up tightly in cling film. Cover and refrigerate until needed. Slice on an angle to serve.
