  • 200grams Riverina Full Cream Fetta
  • 250-500grams cherry tomatoes
  • 6 cloves garlic, unpeeled
  • 1tablespoons oregano, chopped if fresh
  • 2-3 sprigs thyme
  • 1 pinch salt (to taste)
  • 1 pinch cracked pepper (to taste)
  • 3tablespoons olive oil (to glaze tomatoes and garlic)

Meal Idea:
Stir through your favourite cooked pasta, baked vegetables or in a minestrone soup. Also delicious as a cheesy tomato side dish with barbequed meat and salad.

Method

Step 1 of 4

Preheat oven to 200°C/ 180°C fan-forced

Step 2 of 4

In a baking dish arrange tomatoes, garlic bulbs around fetta and sprinkle over oregano. Place thyme springs on the fetta block. Drizzle olive oil over tomatoes and garlic. Season with salt & black pepper.

Step 3 of 4

Bake fetta for 30 mins or until fetta starts to brown.

Step 4 of 4

Remove dish from oven. Remove roasted garlic blubs and peel or squeeze out soft garlic contents back into the dish. Using a fork, crush fetta block and mix through tomatoes, herbs and garlic.
