  • 1packets 230g Mission White Corn Tortilla Strips
  • 1tablespoons extra virgin olive oil
  • 500grams chicken breast fillets, cut into 1.5cm pieces
  • 2teaspoons sachet chipotle seasoning
  • 1packets red capsicum, deseeded, finely chopped
  • 420grams can corn kernels, rinsed,drained
  • 400grams can no-added salt black beans, rinsed, drained
  • 1/4 cup chipotle in adobo sauce, finely chopped
  • 1 1/2 cups tomato puree
  • 1/3 cup shredded tasty cheese
  • 1packets jalapeño, thinly sliced
  • 2 sprigs coriander sprigs, leaves picked
  • 1packets avocado, deseeded, mashed

Description

GO FOR CRUNCH For authentic Mexican dishes, you can’t go past the delicious crunch of Mission White Corn Tortilla Strips. Cook with them or eat them straight out of the bag.

Method

Step 1 of 3

Heat oil in a large ovenproof frying pan over medium heat. Add chicken and seasoning, then cook for 10 minutes, stirring, or until chicken is browned and almost cooked through.

Step 2 of 3

Add capsicum, corn, beans, chipotle in adobo sauce and puree, then cook for 5 minutes, stirring, or until capsicum is tender. Remove pan from heat.

Step 3 of 3

Preheat oven grill to high. Top chicken mixture with tortilla strips and sprinkle with cheese. Grill for 5 minutes or until tortilla strips and cheese are golden. Serve topped with avocado, jalapeño and coriander.
