  • 1 1/2 cup white rice (cold cooked)
  • 1 roasted red capsicum (sliced)
  • 1teaspoons ground coriander
  • 1/4 cup coriander
  • 1/2 cup caramelised onion
  • 500grams chicken breast fillets (cut into strips)
  • 1 1/2 cup grated tasty cheese
  • 1teaspoons ground cumin
  • 1tablespoons smoked paprika
  • 400grams no added salt black beans, rinsed (drained)
  • 125grams corn kernels (drained)
  • 1tablespoons olive oil
  • 6 jumbo tortillas

Method

Step 1 of 3

Combine chicken, spices and oil in a bowl. Cook chicken in a large non-stick frying pan over medium-high heat for 8 minutes, turning often, or until golden and cooked through. Transfer to a clean bowl to cool.

Step 2 of 3

Add beans, corn, rice and coriander to chicken and stir to combine. Warm tortillas in microwave as per packet instructions. Place one on a board and top with 1/6 cup chicken mixture, 1/4 cup cheese, and some of the onion and capsicum strips. Fold in sides of burrito and roll up to enclose. Repeat with remaining ingredients.

Step 3 of 3

To freeze, wrap tightly in foil, label and freeze. Thaw overnight in fridge before cooking. To heat frozen burritos, remove foil and wrap loosely in damp paper towel. Microwave for 2-3 minutes or until heated through.
