- 300grams cooked turkey
- 300grams nacho chips
- 200grams mixed beans, drained
- 1tablespoons canola oil
- 3/4 cup passata
- 2 cloves garlic, peeled and diced
- 1 small red onion, peeled and diced
- 100grams cheddar cheese, grated
- 2 medium tomato, chopped
- 2 medium avocado, peeled, de-seeded and chopped
- 2tablespoons chives, diced
- 2tablespoons fajita spice
Description
This spicy and crunchy snack is a great way to use leftover turkey.
Method
Step 1 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Heat up a pan to a medium heat with the canola oil. Fry the onion and garlic for 3 minutes.
Step 2 of 3
Chop your cooked turkey into bite size pieces or shred. Add the beans, passata and spices to the pan and cook for 15 minutes. Once the sauce has reduced you can remove from the heat.
Step 3 of 3
Now layer the nachos with the bean mix, torn turkey and cheese. Bake in the oven for 10 minutes and then serve with the chopped avocado and tomato with chives to garnish.
