For the mince
- 500grams plant based mince
- 2tablespoons canola oil
- 1 medium white onion, peeled and finely diced
- 3 cloves garlic, peeled and diced
- 1 medium green chilli, diced
- 1teaspoons chilli flakes
- 1/3 cup beef stock
- 500grams passata
- 400grams mixed beans, store bought tin, drained
For the salsa
- 1 large tomato, chopped
- 1 medium red onion, peeled and diced
- 1tablespoons lime juice
- 1tablespoons olive oil
- 1 pinch salt
- 1 pinch pepper
- 1teaspoons coriander, chopped
- 400grams nacho chips
- 100grams vegan cheese, grated
Description
This snack is full of chilli crunch. Perfect for sharing with friends.
Method
Step 1 of 3
Add one tablespoon canola oil to a heated pan. Add plant based mince and fry for 5 minutes or until it starts to brown. Remove the mince from the pan and set to one side. Now add the garlic, chilli and white onion to the pan with another tablespoon of canola oil and fry for 4 minutes.
Step 2 of 3
Add the drained beans, vegetable stock and passata to the pan, low the heat and allow to simmer and reduce while stirring for 15 minutes. While this is simmering, prepare your salsa by finely chopping all ingredients and adding to a bowl to one side.
Step 3 of 3
Warm the nacho chips in a 140°C pre-heated oven for 5 minutes. Now layer the nacho chips with cheese and mince and serve with salsa and a choice of condiments.
