  • 1 handful fresh basil leaves, roughly torn
  • 4tablespoons extra virgin olive oil
  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1 loaf ciabatta
  • 3 cloves garlic, peeled but left whole

Method

Step 1 of 3

Put the tomatoes, basil, and olive oil in a bowl. Season really well with salt and black pepper. Set aside to allow the flavours to develop.

Step 2 of 3

Preheat the grill to its highest setting. Slice the ciabatta horizontally lengthways, then cut each piece into quarters so that you have 8 pieces of bread in total. Toast both sides until golden.

Step 3 of 3

Immediately rub each piece of toasted bread with the garlic. Spoon over the tomato and basil mixture, and serve immediately.
