  • 2tablespoons sour cream
  • 1 avocado, mashed
  • 1tablespoons coriander leaves, chopped
  • 1 onion, chopped
  • 8 corn tortillas
  • 1 lime, juiced
  • 250grams premium beef mince
  • 250grams taco sauce
  • 1tablespoons extra virgin olive oil
  • 200grams tub guacamole (to serve)

Method

Step 1 of 6

Preheat oven to 180°C.

Step 2 of 6

Heat the corn tortillas in microwave for 20-30 seconds or until soft and pliable.

Step 3 of 6

Gently mould into texas muffin pans and bake for 6 minutes until crisp.

Step 4 of 6

Heat oil in a frying pan. Cook onion and mince until browned. Add beans and taco sauce. Cook until heated through.

Meanwhile, roughly mash avocado with lime juice.

Step 6 of 6

Spoon bean mixture into baskets and top with guacamole and sour cream.
