  • 2 spring onions, finely sliced
  • 6 cherry tomatoes, quartered
  • 1/3 cup corn kernels
  • 200grams corn chips
  • 1tablespoons olive oil
  • 1 cup tasty cheese, grated
  • 160grams oven roasted chicken breast, shredded (from the deli)
  • 2tablespoons guacamole (for serving )
  • 2tablespoons coriander (for serving )

Method

Step 1 of 3

Pre-heat oven to 180°C (160°C fan-forced). Combine corn, tomatoes and spring onions. Drizzle with a little olive oil and set aside.

Step 2 of 3

Layer half of the corn chips onto an oven-proof tray. Scatter with half of the chicken and half of the cheese. Repeat layering and place into the oven for 6-8 minutes, or until cheese is melted.

Step 3 of 3

For serving, dollop the corn chips with guacamole, sour cream and corn salsa. Scatter with green chilli and coriander. Enjoy immediately.
