- 1 green chilli, sliced
- 2 spring onions, finely sliced
- 6 cherry tomatoes, quartered
- 1/3 cup corn kernels
- 200grams corn chips
- 1tablespoons olive oil
- 1 cup tasty cheese, grated
- 160grams oven roasted chicken breast, shredded (from the deli)
- 2tablespoons guacamole (for serving )
- 2tablespoons coriander (for serving )

Method
Step 1 of 3
Pre-heat oven to 180°C (160°C fan-forced). Combine corn, tomatoes and spring onions. Drizzle with a little olive oil and set aside.
Step 2 of 3
Layer half of the corn chips onto an oven-proof tray. Scatter with half of the chicken and half of the cheese. Repeat layering and place into the oven for 6-8 minutes, or until cheese is melted.
Step 3 of 3
For serving, dollop the corn chips with guacamole, sour cream and corn salsa. Scatter with green chilli and coriander. Enjoy immediately.
