  • 375grams enchilada sauce
  • 1 avocado, deseeded, diced
  • 3 tomatoes, diced
  • 3 cup iceberg lettuce, shredded
  • 1 cup light sour cream
  • 175grams cheese-flavoured corn chips

Method

Step 1 of 2

Place chicken in a deep frying pan. Cover with cold water and place over medium heat. Bring to the boil. Reduce heat and simmer for 10 minutes or until cooked through. Remove from heat and allow to cool in cooking liquid. Remove chicken from liquid and shred using two forks.

Step 2 of 2

Place lettuce in serving bowls. Top with chicken, tomato and avocado. Add a dollop of sour cream and enchilada sauce. Garnish with corn chips and serve.
