  • 300milliliter sour cream
  • 1 avocado, roughly mashed
  • 1 tomato, diced
  • 1/2 bunch coriander, chopped and sprigs (to garnish)
  • 1 brown onion, diced
  • 1/2 red onion, finely diced
  • 6 tortillas
  • 1 lime, juiced
  • 1teaspoons ground coriander
  • 1tablespoons ground cumin
  • 400grams diced tomatoes
  • 1tablespoons olive oil
  • 500grams chicken mince
  • 2 cup shredded tasty cheese
  • 375grams chunky salsa
  • 3 clove garlic

Method

Step 1 of 8

Preheat oven to 180°C. Line a large baking tray with baking paper.

Step 2 of 8

Heat oil in a saucepan over medium heat. Add onion and garlic and sauté until onion is translucent. Stir in spices and add chicken mince.

Stir in the chicken mince, breaking it up with a spoon, and cook for 3 minutes or until cooked through.

Add tomato and cook for 5 minutes or until very thick. Season to taste.

Place one tortilla onto prepared tray and spread with one-fifth of the chicken mince. Top with ? cup cheese and dollop with 3 tbs salsa. Top with another tortilla and repeat process to make five layers. Top with last tortilla and sprinkle with remaining cheese.

Bake for 15 minutes or until edges of tortillas and cheese on top are golden.

Meanwhile, to make the guacamole, combine all ingredients and season to taste.

Garnish the pie with guacamole, half the sour cream, and diced tomato. Sprinkle with coriander and serve with extra sour cream and tomato on the side.
