- 450grams fresh chorizo sausages, skins removed, finely chopped
- 1/2 cup milk
- sour cream (to serve)
- jalapeño chilli (to serve)
- 1 cup coriander leaves (plus extra leaves to serve)
- 400grams tomatoes
- corn chips (to serve)
- 2tablespoons chipotle in adobo sauce
- 1 slice white bread, crusts removed (cut into cubes)
- 500grams pork mince
- 400grams black beans (drained)
- 150grams grated Mexican-inspired cheese
- 1tablespoons olive oil
- 1 free range egg (lightly beaten)
- 300grams salsa
Method
Step 1 of 5
Preheat oven to 200°C. Grease a large roasting tray with oil.
Step 2 of 5
Combine tomatoes, salsa, beans and 1 tbs chipotle in a bowl. Season and set aside. Place bread and milk in a bowl and stand for 5 minutes.

Combine mince, chorizo, egg, bread mixture, coriander and remaining chipotle in a bowl. Season, then roll into 12 equal balls. Place on tray and bake for 25 minutes.

Preheat grill to high. Pour tomato mixture around meatballs and scatter over cheese. Grill for 7 minutes or until cheese has melted and is golden. Set aside for 5 minutes.
Step 5 of 5
Scatter over extra coriander and jalapeño and serve with corn chips and sour cream.
