- 1tablespoons olive oil
- 500grams chicken breasts, skinless, chopped
- 1 large onion, peeled and finely sliced
- 20grams curry powder
- 1teaspoons ground ginger
- 250grams creme fraiche
- 3/4 cup chicken stock, made with 1 stock cube
- 300grams broccoli, chopped
- 125grams kale, destalked, chopped
- 3 filo pastry sheets
- 2tablespoons butter, melted, for brushing
Description
Two of the ultimate comfort foods combine in this simple chicken curry pie with a crisp filo pastry top.
Method
Step 1 of 3
Pre-heat the oven to 180°C. Heat the oil in a large pan on medium high heat and cook the onion for 3-4 minutes. Add the chicken and cook for 3-4 minutes. Stir in the curry powder and ginger and cook for 1 minute.
Step 2 of 3
Pour over the chicken stock and stir in the creme fraiche, add the broccoli and kale and cook for 3-4 minutes.
Step 3 of 3
To assemble the pie, pour the chicken curry sauce into a large ovenproof dish and top with filo pastry sheets. Brush the pastry with butter and bake for 25 minutes, until golden.
