  • 500grams Woolworths Heart Smart Extra Lean Beef Stir Fry
  • 1/4 cup milk
  • 1/4 cup extra virgin olive oil
  • 2tablespoons plain flour
  • 1 red onion, halved, thinly sliced
  • 800grams sweet potato, peeled, cut into 2cm pieces
  • 1teaspoons rosemary, finely chopped
  • 1tablespoons rosemary leaves (extra)
  • 1 1/2 cup salt-reduced beef stock
  • 1 cup frozen peas
  • 5milliliter olive oil cooking spray

Method

Step 1 of 4

Place sweet potato in a medium saucepan. Cover with water and bring to the boil over medium-high heat. Boil for 15 mins or until tender. Drain well. Return to pan with milk. Mash until smooth.

Step 2 of 4

Meanwhile, heat 1tbs oil in a large frying pan over high heat. Cook half the beef, stirring, for 1 min or until just browned. Transfer to a bowl. Repeat with remaining beef.

Step 3 of 4

Preheat grill to high. Heat remaining oil in same pan over medium-high heat. Cook onion and chopped rosemary, stirring, for 4 minutes or until browned. Sprinkle over flour. Cook, stirring, for 30 secs or until combined. Gradually add stock, stirring until smooth. Add peas and bring to the boil. Remove pan from heat. Stir in beef with resting juices.

Step 4 of 4

Divide mixture among four 1-cup capacity oven proof dishes. Top with sweet potato. Lightly spray with oil. Sprinkle with extra rosemary. Season with pepper. Place under grill for 3 mins or until sweet potato starts to brown. Serve.
