- 500grams pizza & foccaccia dough mix
- 1/2 cup black olives, sliced
- 1/3 cup mozzarella, grated
- 2tablespoons olive oil
- 1 egg, whisked
- 1tablespoons oregano leaves, finely chopped
- 500grams chicken thigh fillets, diced

Method
Step 1 of 3
Preheat the oven to 220°C. Grease four 11/4-cup capacity ramekins. Prepare pizza dough following packet directions, adding the oregano.

Heat oil in a frying pan over medium heat. Cook chicken, stirring occasionally, for 10 minutes or until browned. Transfer to a bowl. Add mushroom, onion and capsicum to pan and cook, stirring occasionally, for 8 minutes or until soft. Stir in flour and cook for 1 minute. Stir in stock and bring to boil. Return chicken to pan with olives and tomato. Season. Divide mixture among ramekins.
Step 3 of 3
Divide dough into 4 equal portions. Roll out until large enough to cover ramekin. Lay over ramekins, brush with egg and sprinkle with cheese. Bake for 10 minutes or until golden. Garnish with parsley.
