  • 1kilograms dutch cream potatoes
  • 60grams butter, chopped
  • 1 cup full cream milk, sliced (¼ cup hot milk, for mash and ¾ cup milk for recipe base)
  • 1-2teaspoons nutmeg (to taste)
  • 2tablespoons parsley, chopped
  • 1tablespoons olive oil
  • 600grams thick beef sausages
  • 1 brown onion, sliced
  • 175grams recipe base curried sausages
  • 300grams steamed green beans to serve
  • 1 pinch pepper (to taste)
  • 1 pinch pink salt ground (to taste)

Method

Step 1 of 6

Place potatoes in a large saucepan. Cover with cold water and lid. Bring to the boil over a high heat. Remove lid and reduce heat to medium-high. Boil, uncovered, for 30 minutes or until tender when tested with a skewer. Drain and set aside for 5 minutes.

Step 2 of 6

Peel and discard the potato skins. Return peeled potatoes to the dry hot saucepan. Shake pan over low heat for 1-2 minutes to remove any remaining moisture.

Step 3 of 6

Mash potatoes. Add butter and hot milk and mix with a wooden spoon until smooth. Season with salt, pepper, nutmeg and parsley. Cover and keep warm.

Meanwhile, heat oil in a medium frying pan. Add sausages and cook for 8-10 minutes, turning regularly until well browned. Remove from the pan. Slice sausages and set aside.

Step 5 of 6

Add onion to the pan and cook until soft. Return sausages to the pan. Empty a Curried Sausages Recipe Base into the pan. Add milk and stir thoroughly. Simmer uncovered for 5 minutes until sauce is heated through.

Step 6 of 6

Serve sausages with mashed potato and steamed green beans.
