- 2tablespoons tomato paste
- 1 cup basil leaves, roughly chopped
- 1 green capsicum, deseeded, finely diced
- 1 carrot, peeled, finely diced
- 1 brown onion, finely diced
- 5milliliter virgin olive oil spray
- 8 sheet sheets filo pastry
- 500grams beef mince
- 1tablespoons olive oil
- 500grams bottle Italian tomato sauce
- 100grams pancetta, diced

Method
Step 1 of 5
Preheat oven to 200°C.
Step 2 of 5
Heat oil in a frying pan over medium heat. Add onion, carrot, capsicum and pancetta. Cook for 8 minutes, stirring occasionally, until soft. Add mince, stirring to break up, until browned. Stir in paste, sauce and water. Bring to the boil. Simmer for 15 minutes or until thick. Remove from heat. Stir in basil.

Divide bolognaise between 4 x 11/3 cup-capacity ramekin dishes.
Step 4 of 5
Using 2 sheets of filo, cut each filo in half crossways. Spray with oil. Scrunch filo and arrange on top of bolognaise. Repeat to cover each pie. Place dishes onto a tray.
Step 5 of 5
Bake for 15 minutes or until filo is golden and crisp. Serve.
