  • 1tablespoons sunflower oil
  • 8 gourmet flavored sausages, such as Sicilian or Toulouse
  • 2 red onions, halved and thinly sliced
  • 2teaspoons light brown sugar
  • 2tablespoons all-purpose flour
  • 1 3/4 cups beef stock
  • 1tablespoons tomato paste
  • 1 bay leaf
  • 1teaspoons salt
  • 1 pinch black pepper
  • 2 carrots, steamed (to serve)
  • 1/2 cup broccoli, steamed (to serve)
  • 4 Yorkshire puddings (to serve)

Method

Step 1 of 4

Preheat the slow cooker, if necessary; see the manufacturer's instructions. Heat the oil in a skillet, add the sausages, and fry over a high heat for 5 minutes, turning until browned on all sides but not cooked through. Drain and transfer to the slow cooker pot.

Step 2 of 4

Add the onions to the skillet and fry over a medium heat for 5 minutes or until softened. Add the sugar and fry, stirring, for 5 more minutes or until the onion slices are caramelized around the edges.

Stir in the flour, then gradually mix in the stock. Add the tomato paste, the bay leaf, and some salt and black pepper and bring to a boil, still stirring. Pour over the sausages. Cover with the lid and cook on low for 6-8 hours or until the sausages are tender.

Step 4 of 4

Serve spooned into large Yorkshire puddings, prepared from a Yorkshire pudding mix, accompanied with steamed carrots and broccoli or mashed potatoes.
