  • 1 pinch salt
  • 1 pinch freshly ground black pepper
  • 1tablespoons olive oil
  • 8-12 pork sausages
  • 2 red onions, peeled and cut into eighths
  • 1 pinch chilli flakes
  • 1 handful rosemary stalks
  • 1.10kilograms potatoes, large ones halved

Method

Step 1 of 2

Preheat the oven to 200°C (Gas 6). Put the sausages in a roasting tin along with the onion, sprinkle over the chilli flakes and rosemary, then add the new potatoes. Season well with salt and black pepper, then drizzle over the oil and combine everything together well.

Step 2 of 2

Put in the oven to roast for 30-40 minutes, or until the sausages are golden all over and cooked through. Turn the sausages and potatoes halfway through cooking.
