- 3 sheet frozen puff pastry, thawed
- 2tablespoons plain flour
- 1 carrot, finely grated
- 1 small onion, finely chopped
- 1 zucchini, finely grated
- 400grams can diced tomatoes
- 1tablespoons tomato paste
- 300grams minced beef
- 2tablespoons olive oil
- 1 egg, beaten

Method
Step 1 of 2
Heat oil in a non-stick frying pan over medium heat. Add onion and cook for 3 minutes until soft. Add mince and cook, breaking up the lumps with a wooden spoon, until browned. Add flour and cook for 1 minute. Stir in carrot, zucchini, diced tomatoes, tomato paste and cup water. Simmer 10 minutes. Cool completely.

Preheat oven to 200°C. Grease a 12-hole medium muffin tray. Use a 10cm round cutter to cut 12 rounds from pastry sheets. Cut out snowflake or star shapes from remaining pastry to decorate pies. Press rounds into muffin tray to line base and sides. Fill with meat mixture (see tip). Top pies with decorations and brush with egg. Bake for 20 minutes or until puffed and golden.
