For the base
  • 60grams shortcrust pastry, rolled and cut into rounds.
For the mince mix
  • 2tablespoons whiskey
  • 1teaspoons mixed spice
  • 1tablespoons orange zest
  • 1/2 medium apple, cored and grated
  • 100grams mince meat
For the topping
  • 20grams flour
  • 20grams unsalted butter, keep some for lining the baking tin
  • 10grams dark sugar
  • 1 pinch salt
  • 20grams macadamia nuts, crushed

Description

These treats have the warming flavour of whisky. Mince pies for grown-ups.

Method

Step 1 of 6

In a bowl, combine the topping ingredients in a bowl fully and then cover and freeze for 20 minutes.

Step 2 of 6

Pre-heat the oven to 180°C/160°C fan-forced. Combine all of your mince mix ingredients in a bowl and set to one side.

Step 3 of 6

Prepare a cupcake baking tin but lightly buttering the edges. Press the shortcrust pastry round into the moulds so that it covers thee base and the edges.

Step 4 of 6

Now take the mince mix from the freezer and stuff into the moulds.

Step 5 of 6

Top the moulds with the topping mix and bake in the oven for 20 minutes.

Step 6 of 6

Remove from the oven and suggested serving with whipped cream.
