Icing Ingredients
  • 80grams icing sugar mixture, sifted
  • 1/2 medium lemon, zested, juiced
  • 1teaspoons very soft butter
  • 1 cup fruit mince (i use robertson's (available from ww))
  • 1/4 cup glace cherries, chopped
  • 1 pack frozen unbaked sweet tart cases
  • 12 glace cherries (for decoration)

Description

A delicious little Mince Tart to have on the festive table this Christmas.
Instruction tip
Can just dust with Icing Sugar before serving if the Icing and Cherries aren't desired.

Method

Step 1 of 9

Preheat Oven to 160°C Fan. Line a baking tray with baking paper (ease of washing up if there are any spillages)

Step 2 of 9

Into a medium bowl, add Fruit Mince and chopped Cherries, mix to combine well.

Step 3 of 9

Remove tart cases from freezer and place on baking tray.

Step 4 of 9

With a teaspoon, spoon the mixture evenly into each Tart Case.

Bake in a preheated oven for about 25 minutes or until the pastry is lightly golden (as each oven is different).

Remove to a wire rack, then when cool enough to handle, remove the foil base to allow pastry to cool completely.

Icing directions - into a small bowl, add icing sugar mixture, zest, butter and enough lemon juice to bring it to the desired consistency for spreading.

Teaspoon mixture evenly onto each tartlet, smooth the top and decorate with cherries.

Step 9 of 9

Serve and enjoy over the Christmas festive season.
