Marzipan Mince Pies

For the base
- 50grams marzipan, slice into 6 slices
- 60grams shortcrust pastry, rolled and cut into rounds
For the mince mix
- 2tablespoons kirsch
- 1teaspoons mixed spice
- 1tablespoons orange zest
- 100grams mince meat
For the topping
- 20grams flour
- 20grams unsalted butter, keep some for lining the baking tin
- 10grams dark sugar
- 1 pinch salt
- 10grams dried cranberries
- 20grams almonds, crushed
Description
The marzipan adds a nutty and almond flavour to these festive treats.
Method
Step 1 of 6
In a bowl, combine the topping ingredients in a bowl fully and then cover and freeze for 20 minutes.
Step 2 of 6
Pre-heat the oven to 180°C/160°C fan-forced. Combine all of your mince mix ingredients in a bowl and set to one side.
Step 3 of 6
Prepare a cupcake baking tin but lightly buttering the edges.
Step 4 of 6
Press the shortcrust pastry round into the moulds so that it covers the base and the edges. Place a slice of marzipan at the bottom of of pastry.
Step 5 of 6
Now take the mince mix from the freezer and stuff into the moulds. Top the moulds with the topping mix and bake in the oven for 20 minutes.
Step 6 of 6
Remove from the oven and suggested serving with whipped cream.
