- 4 sheet puff pastry, thawed
- 1tablespoons poppy seeds (to sprinkle)
- 1 carrot, peeled, finely grated
- 1 onion, finely chopped
- 1 medium zucchini, finely grated
- 500grams turkey mince (see Note)
- 2teaspoons dijon mustard
- 1/4 cup cherries, pitted, chopped
- 1tablespoons olive oil
- 1 egg, lightly beaten
- 2tablespoons thyme leaves
- 50grams pistachio, chopped

Step 1 of 3
Preheat oven to 220°C. Line two baking trays with baking paper.

Heat the oil in a small frying pan. Add onion and carrot and cook over medium-low heat for 5 minutes or until lightly browned. Add zucchini, cherries, nuts, thyme and mustard and cook for 5 minutes or until the zucchini has softened. Cool for 5 minutes.
Step 3 of 3
Combine mince and onion mixture in a bowl. Cut the pastry sheets in half. Divide the filling into eight portions. Place each portion on one long side of each pastry piece and form into a sausage shape. Brush the other long side with a little egg. Roll up to enclose. Cut each roll into four pieces and place onto trays, seam-side down. Brush tops lightly with egg and cut slits in the top. Sprinkle with poppy seeds. Bake for 20-25 minutes or until golden. Note: The addition of cherry is a great twist on a classic snack. You could use chicken, pork or veal mince for these sausage rolls, or even a combination.
