  • 2 sheet frozen puff pastry, thawed
  • 2 green apples
  • 2 large carrots, peeled
  • 1 large fennel bulb
  • 1 cup continental parsley, leaves picked
  • 1teaspoons fennel seeds, crushed
  • 5milliliter extra virgin olive oil spray
  • 1tablespoons dijon mustard
  • 500grams extra lean pork mince
  • 2teaspoons olive oil
  • 2 eggs
  • 3/4 cup fresh wholegrain breadcrumbs

Method

Step 1 of 8

Preheat oven to 200°C. Line a large baking tray with baking paper.

Step 2 of 8

Trim and reserve fennel fronds. Halve bulb and grate one half, reserving the other half. Finely grate half a carrot and 1 apple.

Step 3 of 8

Heat a large non-stick pan over medium-high heat. Spray with oil, add grated vegetables and apple, and cook for 8 minutes or until liquid has evaporated. Transfer to a large bowl and cool.

Add mince, breadcrumbs, 1 egg and mustard to vegetable mixture. Season and mix together well.

Cut pastry sheets in half. Shape one-quarter of mince mixture into a log the same length as the pastry. Place onto pastry and roll over to enclose filling. Repeat with remaining mixture. Cut each roll into 4 pieces.

Step 6 of 8

Transfer sausage rolls to tray. Beat remaining egg in a small bowl. Brush rolls with egg and sprinkle with fennel seeds. Bake for 30 minutes or until puffed and golden.

Step 7 of 8

Meanwhile, finely slice reserved fennel bulb and apple, and shred remaining carrot. Toss together with fennel fronds, parsley and oil in a bowl.

Serve sausage rolls with salad.
