  • 1 cup plain flour
  • 60grams butter
  • 2 chorizo sausages
  • 1L olive oil (for frying)
  • 2 eggs
  • 1 cup mozzarella, grated
  • 1/2teaspoons salt

Method

Step 1 of 6

Preheat oven to 200°C. Line 2 baking trays with baking paper.

Step 2 of 6

Finely dice the chorizos and fry in olive oil in a hot frying pan until golden. Drain well on paper towel.

Step 3 of 6

Place butter, 1/2 cup water and salt in a saucepan over medium-high heat. As soon as the butter has melted and the water is boiling, add the flour all at once and beat with a wooden spoon until smooth.

Step 4 of 6

Reduce the heat to low and beat until the dough pulls away from the sides of the pan and forms a ball. Stir over heat for 2 minutes to dry the dough slightly. Remove from heat and cool for 5 minutes.

Step 5 of 6

Add one egg to dough and beat really well until incorporated and smooth. Repeat with remaining egg. Stir in cooked chorizo and mozzarella.

Step 6 of 6

Using 2 spoons, drop dollops of the mixture onto trays. Flick a little water over them to help produce steam. Bake for 20 minutes until puffed and golden and serve immediately.
