  • 500grams chicken mince
  • 1 1/2 cup grated cheese
  • 1/2 cup parmesan cheese
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 egg
  • 1 tin small corn kernels
  • 1teaspoons italian mixed herbs
  • 4 sheet puff pastry, thawed
  • 1 egg (for basting pastry)

Description

A tasty twist on an old favourite.
Instruction tip
These rolls can be cut however you like - as mentioned, I cut them in half, so each person gets two rolls. You can also make them smaller if you want to serve them at a party or for nibbles.

Method

Step 1 of 5

Preheat fan forced oven to 200°C and line trays with baking paper

Step 2 of 5

Combine mince, cheeses, carrot, zucchini, egg, corn and mixed herbs and mix together well

Step 3 of 5

Cut pastry sheets in half and brush long edges of pastry with whisked egg. Spoon portion of mince mix into middle of pastry sheet and roll pastry over the top to fully cover it. Pressing edges together firmly. Optional: You then cut each 'roll' in half.

Step 4 of 5

Brush the tops of the sausage rolls with more of the whisked egg and place on the baking trays.

Bake in oven for 25-30 mins until pastry is golden
