  • 2 cup mashed potato , cold
  • 1 egg
  • 1 handful grated cheese
  • 2 spring onions
  • 2tablespoons plain flour
  • any spices you like
  • oil (for frying)

Description

If you are ever in the fortunate position of having leftover mashed potato (I know!) these are a snap to whip up, and taste delicious.

Method

Step 1 of 2

In a large bowl, tip in the mashed potato. Then add in the egg, cheese, onions and stir it all together. Sprinkle in the flour and spices and mix until well incorporated.

Step 2 of 2

Cover the base of frying pan with a little oil. Place spoonfuls of mixture into the pan and flatten slightly into a circle. You can make them smaller too. After the undersides have cooked and are slightly browned, carefully flip them over and cook the other side. Enjoy with sour cream, or tomato sauce.
