Method
Step 1 of 2
Put a roasting tin you’ve just roasted some meat in on the unlit hob and tilt so the fat settles on top of the meat juices. Spoon off almost all the fat, then add the stock and turn on the heat to high. Bring to the boil, stirring and scraping off all the crusty bits that are stuck to the base of the tin as you go, then reduce to a simmer.

Mix the flour and a tiny amount of water to a smooth paste, then stir into the tin, using a balloon whisk to avoid any lumps. Cook gently, stirring all the time, for 5 minutes, then taste and season with salt and black pepper, if needed. Strain through a sieve and serve in a warmed jug or gravy boat.
