  • 3 cup self-raising flour
  • 750milliliter vegetable oil
  • 1 1/2 cup cornflour
  • 3 large white onions
  • 2teaspoons cayenne pepper
  • 2teaspoons garlic powder
  • 2teaspoons onion powder
  • 1 egg, whisked
  • 375milliliter beer
  • 500milliliter sparkling mineral water

Method

Step 1 of 4

Preheat oven to 150°C. Place a wire rack over a large baking tray.

Step 2 of 4

Cut the onions crossways into approximately 12mm slices. Separate into rings and place in a shallow bowl. Add 1 cup flour. Toss to coat.

Step 3 of 4

Combine remaining flour, cornflour, garlic and onion powders, and cayenne pepper together in a large bowl. Season with salt. Whisk in mineral water, beer or ginger ale and egg until smooth.

Step 4 of 4

Heat oil in a small saucepan over medium-high heat. Dip onion rings into batter. Carefully lower into hot oil, cooking in batches to prevent overcrowding the pan. Cook, turning once, for 2-3 minutes or until golden. Remove using a slotted spoon and drain on the rack. Sprinkle with salt, if desired, and keep warm in the oven while you cook the rest of the onion rings. Serve with your choice of burger.
