A classic accompaniment to roast turkey, chicken, or pheasant, this subtly spiced sauce is deeply comforting.
Method
Step 1 of 2
Put the milk, onion, and cloves in a small saucepan and bring them to the boil. Turn the heat off and cover the pan, leaving the onion and cloves to infuse for at least 1 hour.
Step 2 of 2
When you are ready to cook the bread sauce, remove the onion and cloves from the milk, add the breadcrumbs, and season well. Heat the sauce over a medium heat until it is warmed through and thickened. Stir in a grating of fresh nutmeg and a knob of butter to serve (if using).
