For the onion jam
  • 2 medium red onion, finely diced
  • 50grams caster sugar
  • 2tablespoons balsamic vinegar
  • 1 stick cinnamon
  • 1/3 cup red wine
  • 1 star anise
  • 1 pinch salt
  • 1teaspoons cracked black pepper
  • 200grams cheese flavoured crackers
  • 200grams cheddar cheese, sliced

Description

This light bite is elevated by this deliciously intense flavoured jam.

Method

Step 1 of 3

Fry the onions on a non-stick pan on a medium heat for 3 minutes.

Step 2 of 3

Add the rest of the the jam ingredients and allow to simmer for up to 20 minutes until the sauce begins to reduce and become sticky,.

Step 3 of 3

Remove form the heat and take the star anise and cinnamon stick away and serve with the crackers and sliced cheese.
