  • 170grams original wheaten crackers (to serve)
  • 2 camembert (125g each)
  • 1tablespoons olive oil
  • 6 sprig lemon thyme
  • 1 garlic clove, thinly sliced

Method

Step 1 of 3

Preheat a barbecue to medium heat (see tip). Place 2 x 25cm squares of foil on benchtop. Top with sheets of baking paper the same size.

Step 2 of 3

Unwrap the camembert and make a 5-6 slashes in the top of each. Insert a few slices of garlic and some of the thyme into each cut. Scatter remaining thyme over the top. Drizzle with a little oil and season with cracked black pepper. Fold in sides of foil to form a parcel and seal edges.

Step 3 of 3

Place camembert parcels on the coolest part of the barbecue. Cover with lid or roasting pan and cook for about 8 minutes or until camembert is soft in the centre. Serve warm with crackers.
