Method

Step 1 of 3

Finely chop good-quality dark chocolate. Place it into a medium heavy-based saucepan, with whipping cream, unsalted butter, caster sugar, and a pinch of salt.

Heat the mixture slowly over a medium heat, stirring constantly, until the chocolate has melted and the mixture is smooth, glossy, and warm.
