For the garnish
  • 4tablespoons hazelnuts, chopped
  • 2tablespoons caster sugar
For the sauce
  • 80grams dark sugar
  • 30grams golden syrup
  • 70grams dark chocolate
  • 20grams cocoa powder
  • 240grams profiteroles

Description

A tower of pillowy pastry filled with cream, chocolate and nuts.

Method

Step 1 of 5

Melt the sauce ingredients in a pot on a medium heat and bring to the boil, once it starts to boil, remove from the heat and set to one side.

Step 2 of 5

Fry the chopped hazelnuts with the caster sugar while tossing until the sugar begins to melt and then remove from the heat.

Step 3 of 5

Stack the profileroles in a tower on a large plate.

Step 4 of 5

Drizzle the sauce over the profileroles equally and dust with the sugared hazelnuts.

Step 5 of 5

Dip the profiteroles in chocolate then stack (this helps them to bind together).
