  • 1 zucchini, grated
  • 3 shortcut bacon rashers, chopped
  • 1 cup plain flour
  • 2/3 cup cheese, grated
  • 1 clove garlic, crushed
  • 1/2teaspoons onion flakes
  • 2 eggs, lightly beaten
  • 1 pinch salt (to taste)
  • 1 pinch pepper (to taste)
  • 1/3 cup water

Description

These fritters made in a pie maker are perfect to make with any leftover vegetables you may have in the fridge.

Method

Step 1 of 5

Place florets in food processor and blitz until like cauliflower rice. Transfer to large bowl.

Step 2 of 5

Add garlic, onion flakes, zucchini, bacon, cheese and flour, and mix well to combine.

Step 3 of 5

Beat eggs with a fork in a small bowl, season with salt and pepper. Add eggs along with 1/4 cup of water to the cauliflower mix and stir. Gradually add remaining water (or add more or less) to achieve a thick batter.

Step 4 of 5

Heat up pie maker as per instructions. Drop approx 1/4 cup of mixture into holes, close lid and cook for approx 5 minutes. Open lid, flip fritters pover, then close lid and cook a further 5 minutes.

Step 5 of 5

Remove from pie maker and let rest on plate with paper towel. Made approx 16 "fritters" (I lost count after I ate the first few).
