- 1/4 cup flat-leaf parsley, chopped
- 1 large zucchini, coarsely grated
- 1/4 cup parmesan, grated
- 1 1/2 cup wholemeal self-raising flour
- 170grams jarrah honey ham off the bone, chopped (from the deli)
- 4 eggs, lightly beaten
- 200grams cottage cheese

Method
Step 1 of 3
Preheat oven to 200°C. Line a 12-hole medium muffin tray with paper cases. Set aside 30g chopped ham. Squeeze liquid from zucchini.
Step 2 of 3
Place zucchini, remaining ham, parsley and flour in a medium bowl and combine. Season with pepper.
Step 3 of 3
Mix cottage cheese and egg together. Stir into zucchini mixture until combined. Divide mixture evenly between paper cases, scatter with reserved ham and parmesan. Bake for 25 minutes until golden brown and cooked through. Serve.
