- 1/4 cup milk
- 1/4 cup frozen peas
- 105grams pink salmon in springwater, drained
- 1/3 cup corn kernels
- 4 eggs
- 1/3 cup cheese, grated
- 3 cherry tomatoes, halved
- 2 leaves butter lettuce

Method
Step 1 of 4
Preheat oven to 190°C. Lightly whisk eggs with self-raising flour and pink salmon in springwater.
Step 2 of 4
Add to egg mixture with milk, grated cheese, corn kernels and frozen peas. Stir to combine.
Step 3 of 4
Spoon mixture into 12-hole patty pans and bake for 15 minutes until puffed and golden. Repeat with remaining mixture.
Step 4 of 4
Cool. Add to lunch box with some cherry tomatoes and butter lettuce leaves.
