  • 50grams butter, melted
  • 1/2teaspoons dried dill
  • 100grams red capsicum, diced
  • 1/2 cup milk
  • 2 large eggs, lightly beaten
  • 50grams spinach, washed

An easy meal that's family friendly and full of vegetables.

Method

Step 1 of 4

Mix all the vegetables in a large bowl with the dill, milk and stock powder, fold through the flour and cheese, the melted butter and beaten egg.

Step 2 of 4

Spray a pan with olive oil and heat on low to medium heat, place spoonfuls of the mix onto the hot pan.

Step 3 of 4

Cook gently until the top bubbles and it starts to brown around the edges then flip and cook till golden.

Step 4 of 4

Serve hot with a nice homemade Chilli jam or chutney and salad.
