- 2 eggs
- 1/2 cup milk
- 420grams can corn kernels
- 420grams can creamed corn
- 1/4 cup dried chopped chives
- 1/4 cup oil (for frying)

Unused mixture can be stored in the fridge for up to 24 hours.
Method
Step 1 of 4
Note: To make this gluten free all you need to do is substitute the self raising flour for gluten free self raising flour. And be sure to check the label on the creamed corn doesn't contain a wheat thickener.
Step 2 of 4
Place flour, stock and chives in a large mixing bowl, stir to combine and make a well in the centre.
Step 3 of 4
Using a fork or whisk, mix in the eggs and milk. Add drained corn kernels and creamed corn and stir well until combined.
Step 4 of 4
Heat oil and drop one heaped tbs of fritter mixture into the pan. Cook 1-2 minutes each side until golden and cooked through. Repeat with remaining mixture.
Enjoy hot or cold.
