  • 750grams boiled potatoes
  • 1/4 cup sweet corn kernels
  • 1/4 cup red capsicum, chopped
  • 1/4 cup brown onion, diced
  • 1/4 cup frozen green peas
  • 1/4 cup spring onions, chopped
  • 2 eggs
  • 1teaspoons cumin
  • 1teaspoons smoked paprika
  • salt & pepper (to taste)
  • 1/4teaspoons red chilli powder (optional)
  • 5-10milliliter water (as required)
  • 2tablespoons oil
  • 200grams breadcrumbs

Description

Slightly crispy crust with a soft potato center filled with veggie goodness. You can use any veggies or seasonings of your choice in this recipe.

Method

Step 1 of 8

Mash up the boiled potatoes in a bowl.

Step 2 of 8

Add the chopped up veggies. You can use any veggies that you like - just cut them up small.

Step 3 of 8

Add the seasonings. I like mine a bit spicy but you can also used mixed herbs or any of your favourite seasonings.

Mix everything thoroughly in a bowl.

Beat an egg in a separate bowl and add a splash of water to thin it out.

Step 6 of 8

Form small patties with the potato mixture and dip each one in the egg wash, then coat with breadcrumbs.

Step 7 of 8

Heat up some oil in a frying pan and pan fry each patty until the crust is golden and slightly crispy and the filling inside is warm.

Step 8 of 8

Serve warm by themselves with sweet chilli sauce and/or with a side salad.
