  • 200grams potato, cooked, cooled
  • 150grams sweet potato , cooked, cooled
  • 185grams tin tuna, drained, flaked
  • 1 clove garlic, finely grated
  • 1 shallot, finely chopped
  • 1 egg, lightly beaten
  • 1teaspoons onion powder
  • 1/2teaspoons turmeric (optional)
  • 1teaspoons sweet paprika
  • 1/2 cup panko bread crumbs
  • 1 pinch salt, to taste
  • panko, for crumbing
  • 1 cup oil, for frying

Description

Great to serve as Finger Food at a Party, as an Entree or a Main Meal. Very economical to make, delicious to eat.
Instruction tip
Cooking time does not include the cooking time of the vegetables. Delicious cold the next day.

Method

Step 1 of 4

In a large bowl, add potato and sweet potato, mash well, add remainder of ingredients except extra panko for crumbing and the oil.

Step 2 of 4

Mix well until all ingredients are combined. Roll into small bite sized balls (the mixture should make about 20) roll in extra panko crumbs, making sure they are well coated. Place in fridge to chill down for 10 minutes.

Step 3 of 4

Add oil to frypan to heat (I use a 26cm pan for this amount of oil). You will know when oil is the right temperature by dropping a crumb or two into the oil, if it starts to bubble, then it's good to go.

Step 4 of 4

Cook the bites in the oil in two batches, as to not overcrowd the pan. Cook for about 5 minutes, for each batch, turning them often in the pan until cooked and golden in colour. Remove and drain on absorbent paper. Can serve on their own with a dipping sauce, or with homemade chips, or with a fresh garden salad or with a cold rice salad - the list is endless - Enjoy!
