Description
Quick and easy, delicious as a side dish or as a snack. I also add grated carrot and zucchini for my little fussy eaters.
Instruction tip
Any leftovers can be stored in the fridge or frozen. I make a batch and freeze for my little ones, they are great for a quick lunch. Just thaw and heat in the oven.
Method
Step 1 of 5
Peel and grate potatoes. Once grated remove all excess liquid. I just squeeze it out, then pat dry on paper towel and return it to the bowl.

Chop leek finely and add to potatoes
Step 3 of 5
Heat pie maker. Once ready spray with a little spray oil and fill.
Step 4 of 5
Add grated cheese to potato and Leek mixture and stir to combine.
Add salt and pepper to taste. I find the cheese adds salt so really only add a bit of pepper.
Step 5 of 5
Close lid and cook for approx 5 min. After 5 min turn the rosti over and cook for a further 5 min with the lid open. Serve and enjoy.
