- 1/4 cup plain flour
- 60grams butter
- 1 cup milk, warm
- 1tablespoons parsley, finely chopped
- 2tablespoons parmesan, grated
- 1 pinch pepper (for seasoning)
- 4 eggs, at room temperature
- 1tablespoons chives, finely chopped
- 1/2 cup cheese, grated
- 2tablespoons breadcrumbs
- 1 pinch pink salt ground (to taste)

Method
Step 1 of 5
Preheat oven to 200°C.
Step 2 of 5
Grease 4 x 1-cup capacity soufflé dishes. Add crumbs and turn to coat inside of dishes. Shake out excess. Place a tray into oven to preheat.
Step 3 of 5
Melt butter in a small saucepan over medium heat. Add flour, stir well to combine then stir over heat for 1 minute. Remove from heat and gradually whisk in milk until smooth. Return to heat and stir until sauce boils and thickens. Remove from heat, add cheeses and herbs, season and stir until smooth.
Step 4 of 5
Separate each egg, one at a time, beating yolks into the sauce and placing whites into a clean bowl. Beat egg whites until stiff peaks form. Gently fold into sauce mixture.
Step 5 of 5
Divide mixture evenly between dishes and smooth tops. Place onto preheated tray and bake for 20 minutes until puffed and golden. Serve.
