- 1tablespoons olive oil
- 1 small glass dry white wine
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1 onion, finely chopped
- 225grams pancetta, cubed
- 2 cloves garlic, grated or finely chopped
- 2-3 stalks fresh rosemary, leaves finely chopped
- 225grams frozen peas, thawed
Method
Step 1 of 2
Heat the oil in a large frying pan, add the onion, and cook over a low heat for 5 minutes, or until soft and translucent. Turn up the heat, add the pancetta, and cook for a further 5-8 minutes, or until the pancetta is golden. Turn the heat down, add the garlic and rosemary, and stir for a few seconds.

Turn the heat back up, add the wine, and allow to boil for 5 minutes. Stir in the peas, and simmer for 10 minutes. Taste and season well with salt and black pepper. Serve with lamb.
