- 5-6 medium potatoes, peeled and grated
- 1/3 cup spring onion, sliced
- 3tablespoons flour
- 1/4 cup mayo (I used "made with plants")
- 1 1/2teaspoons dried dill
- 1teaspoons dried chives
- 4-8tablespoons oil or butter for frying (I used "nuttlex")
- salt & pepper (to taste)

Method
Step 1 of 4
After peeling and grating potatoes, squeeze out as much liquid as possible. This can be achieved by grabbing handfuls and squeezing as much of the fluid out as you can. Or you can place it in a colander and weight it down for a few minutes. I prefer the first method.
Step 2 of 4
Mix together the potato, flour & spring onion. Season to taste.
Step 3 of 4
Heat butter in a frying pan, the aim is to shallow fry.
Grab a big spoonful of the potato mix and press it together with your hands. Place in the oil and use a spatula to press down.
Cook for a couple of minutes on each side or until golden brown and crispy.
Repeat with remaining mixture.
Step 4 of 4
Mix together the mayo and herbs.
Serve on top of warm latkes.
Some people might suggest serving with a salad or something. I prefer not to.
