  • 1 sheet ready-rolled frozen puff pastry, partially thawed
  • 125grams wheel of brie, thickly sliced
  • 1 free range egg, lightly beaten
  • 1 lemon, zested, juiced
  • 1tablespoons honey
  • 1tablespoons Woolworths extra virgin olive oil
  • 1/2teaspoons thyme leaves

Description

A delectable snack of creamy baked brie and tender asparagus wrapped in crisp puff pastry and topped with a drizzle of honey dressing.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper.

Step 2 of 4

Cook asparagus in a saucepan of boiling water for 30 seconds or until just tender. Drain. Rinse under cold water. Drain well.

Step 3 of 4

Quarter pastry to form 4 squares. Place squares on tray. Top centre of each square with brie and asparagus. Brush pastry edges with a little egg, then fold over to enclose filling. Brush pastry with egg. Bake for 15 minutes or until golden and crisp.

Step 4 of 4

Meanwhile, place remaining ingredients in a small bowl and whisk to combine. Season with pepper. Serve puff pastries with honey dressing.
